During the making of this cheese mustard seeds are added to the mixture. The richness and punch of flavour that the cheese gets while it is maturing is intensified by the mustard seeds which add acidity and punch as well. This combination works: a rich and intense cheese flavour is the result of a perfectly balanced mustard cheese.
